Take tomatoes and puree them with your hands, or a stick blender. Add to it, 3 tbsp olive oil, salt to taste and set aside. Take the prepared dough, roll into a long sausage, and then cut it up into gnocchi-shaped pieces. Heat the 500ml (2 cups) olive oil in a deep saucepan or deep-fryer until it reaches 175°C. Once at that temperature, place the dough pieces carefully in the pan, one at a time, and fry until crisp and golden. There, you are almost done. Serve them with a little tomato, a basil sprig, and a piece of mozzarella. As we all love ourselves a little extra cheese, sprinkle some grated parmesan and serve it!

Loaded Potato Skins

We cannot find anyone who doesn’t love potatoes! Potatoes are super versatile and have such great taste. This recipe bakes the potato skins until crisp and then adds toppings and they bake a few minutes more until the cheese is melted. To begin with, set aside butter, parsley, garlic powder, and seasoned salt in a small bowl. Now make sure the baked potatoes are cool, and then cut the potatoes in half lengthwise. Brush the inside and the outside of the potatoes with the butter mixture and then place them in a baking dish. Bake for 15 minutes, flip them over and then for another additional 5 minutes until they are brown and crisp. Fill each potato with cheese and bacon. Bake it for another 5 minutes until the cheese is melted. Serve it well with sour cream.

Southern Fried Cauliflower

Here’s a kicking fried cauliflower recipe that has some spice and crispness to make your cocktail night even more delicious! Start by pouring buttermilk and whisked eggs in separate shallow dishes. Now sift flour, paprika, pepper, garlic powder, cayenne and a large pinch of salt onto a large plate. Take trimmed floret cut-out cauliflowers and coat it well with buttermilk. Add to the flour mixture and eggs to coat it all well. Pour enough oil into a large saucepan to come halfway up the side and heat over medium-high heat. Deep fry the cauliflower for 2 minutes until they are golden brown. Serve it hot with a mixture of mayonnaise and lemon.

Cucumber Hummus

Cucumber hummus bites make for a super chill yet perfect finger food. With such a crispy delight, cucumber slices are topped with roasted red pepper hummus, tomatoes, feta cheese and fresh parsley. And don’t you worry, it is super quick and easy as well! Take a serving platter and place the sliced cucumber on it. Using a small teaspoon spoon a small amount of the roasted red pepper hummus onto each cucumber slice. You can easily top it up with cherry tomato, crumbled cheese, and freshly chopped parsley. Serve it chill.
